Preparation

  1. At first, chop carrot and onion finely.

  2. Now soak rice for 15 min.

    Long grain basmati rice shall be used. If you do not have time to soak, boil more water in an open pot and cook rice. But soak rice as long as possible. It helps to cook the rice faster in closed pot.

Making Carrot Rice

  1. Now heat ghee in a deep pan and add bay leaf, cinnamon, cardamom, cloves, whole black paper, cumin seeds.

  2. When it sizzles, add chopped onion and fry for 2 min on low heat.

  3. Then add cashew nuts and fry for 2 min again on low heat.

  4. Now add chopped carrot and fry for another 2 min.

  5. Then add rinsed rice. Fry for 2 min.

  6. Now add salt, pepper powder and mix well.

  7. Then add water and mix well.

  8. Cover the pan with a lid and cook on low flame for 10-15 min.

  9. Now Carrot Rice is ready to serve and serve with Dum Aloo or Paneer Recipe or any curry of your choice. Enjoy!
