Preparation

  1. At first, soak basmati rice for 30 min. After 30 min, wash the rice in the running water and keep aside for later use.

  2. Then slice onion.

  3. Now heat oil in a kadai and fry onion until it turns golden

  4. Then make a smooth paste with 1-inch ginger, 20 pieces garlic, ¼ cup water and keep it aside.

  5. Now boil eggs.

  6. Shell the eggs and keep it in a bowl for later use.

  7. Now boil the potato pieces.

  8. Then soak few saffron strands in warm water and keep aside.

Potato & Chicken Marination

  1. Marinate boiled potato with salt, red chili powder.

  2. In a large bowl, marinate chicken pieces with curd, fried onion, ginger- garlic paste, garam masala powder, salt, red chili powder, kewra water and mix well. Then keep aside for 2 hrs.

Frying Potato & Making Chicken

  1. Fry marinated potato until golden.

  2. Now heat oil and fry marinated chicken pieces. Cook for 10 min on the low flame. Flip chicken pieces time to time.

  3. If water is required, then add ½ cup water now. Cover the pan and cook for 10 min again.

  4. Now Chicken is ready.

  5. Then separate chicken pieces from the gravy.

  6. Add milk in the chicken gravy. Mix well.

Making rice

  1. Then boil 3 cups of water in a large pot.

  2. Now add green cardamom, cloves, salt, ghee and soaked & washed rice.

  3. Cook until rice is 50% done. Now rice is ready.

Layering Biryani

  1. At first, make 1st layer with lemon juice, garam masala powder, chicken gravy, ghee, chicken pieces, fried potato, fried onion, a pinch of garam masala.

  2. Then make 2ndlayer with cooked rice, saffron water, khoya.

  3. Now make 3rd layer with rest amount of cooked rice, eggs, saffron water.

Dum Biryani

  1. Then cover the pot and seal with aluminium foil or atta dough.

  2. Now cook on medium flame for 10 min. Then cook on low flame 25 min. Once done, switch off the flame and keep it for another 15 min.

  3. Now it is ready to serve. Enjoy!
