Preparation

  1. At first, boil the eggs.

  2. Peel off the eggs.

  3. Make medium slashes over the eggs with the help of knife.

  4. Now chop onion, tomato into cubed.

  5. Make a smooth paste with onion, ginger, garlic and green chili. Keep it aside.

  6. Then make a smooth paste with tomato. Keep it aside.

Making Gravy

  1. Now heat 1 tbsp oil in a kadai and add little turmeric. Fry eggs until it turns golden.

  2. Then add bay leaf, cinnamon stick, green cardamom, black pepper.

  3. When the aroma release from the whole spices, add onion-ginger-garlic-green chili paste. Fry for 2 min on low flame.

  4. Now add salt, turmeric powder and mix well.

  5. Then add tomato paste and fry until the raw smell goes away.

  6. Now add cumin powder, coriander powder, red chili powder. Fry for 1 min.

  7. Then add water and cook for 5 min on low flame.

  8. Now add coconut milk and mix well.

  9. Then add fried eggs. Cook on 5 min again on low flame.

  10. Now Egg Malai Curry is ready and serve with steamed rice or roti. Enjoy!
